As a former sommelier in a Michelin starred restaurant (back when there was only 43 of us in the UK from memory) in the early 1990's I fondly remember enjoying many grouse. If not at the restaurant I worked, but on days out to London to spend my wages in 2 or 3 starred restaurants. I don't recall which ones I had grouse in, but would hazzard a guess that Le Gavroche would have been one. It may have taken a huge proportion of my pay, but every penny was worth it.

I once visited a grouse moor in Yorkshire as a guest of the unhappy water company who used it. To promote heather growth the landowners would burn the land which means there is only ever shallow roots. This means there is really bad muddy run off whenever it rains - and this is Yorkshire remember - which meant the water company had to spend loads making the water clear. So people’s water bills are higher so landowners can make money and rich people can shoot birds.
