Such a beautiful read. I didn't grow up with tofu but have come to utterly love it in the last 10-15 years. I don't find it bland, not the lovely fresh stuff, I find the taste is subtle, delicate, it makes me focus on the pleasure of eating it. I loved the soft and hot tofu pudding in ginger syrup that a guide took me to eat in Hong Kong's Tai Po Market District. I still dream of it. I also love cold tofu drenched in spring onions and chilli and soy... or fried tofu with the crisp outer layer giving way to creamy inside... or an amazing egg custard tofu that was served in circular slices with mustard greens at a restaurant I used to visit near our old home. Gosh I'm craving tofu now!
