This recipe sounds amazing but I cannot help wondering whether the cooks live in an apartment or a detached house with a lot of space between neighbours. Because tripe smells horrible when it cooks. About one hundred years ago, my university residence split into a nasty racialised argument over the black students cooking the tripe of their township families and the white students who'd never encountered such ingredients in their middle class suburbs.

Love it! Tripe is quite a staple here in Indonesia, which means I don't need to wait until Eid al-Adha to get my hands on them :)
