I fell in love with deep fried snacks in India. From Lanka Pakora (the same as the chilli snacks you describe) to battered eggs in Kolkata.
One thing I noticed was the essential importance of getting the timing right - especially with street vendors. What was a joy at 5 pm yesterday may well be a flabby disaster at 5.15 today!
